Take your good ol’ English Brekkie on a Northern African Adventure with this flash in the pan, 15 minute fry up that’s good enough for breakfast, brunch, lunch, dinner or midnight munchies….. 🍽
For 2-3 people
- Glug olive oil
- Half red onion
- Large clove garlic
- 1-3 sausages (allow 1 per person)
- 2-6 bacon rashers (allow 2 per person)
- Dollop butter
- Handful of mushrooms
- 1 tin chopped tomatoes
- Few sprigs parsley chopped (and a couple of leaves to garnish)
- Dried oregano (or any dried/fresh herbs you like)
- 1-6 eggs (allows 1-2 per person)
Pour the oil in the pan on a medium heat. Whilst it’s warming, chop the onion finely and throw in the pan. And stir around occasionally. Whilst onion is softening, slice the sausages into rounds and dice up the bacon, then thrown these in the pan and toss around to brown.
Then add a nice dollop of butter and, as that’s melting, cut your mushies into quarters and chop up the garlic clove then throw these in the pan and mix it all up. Whilst everything is browning, chop the parsley then throw this in with the tin tomatoes and herbs plus a pinch of pepper.
Stir it all around and then add 2-3 tablespoons of collagen – or more if you like – and stir. Level it all out in the pan and then crack the eggs onto the top of the mixture and cover with a lid (if no lid then a plate can do, but watch your fingers when you lift it off as it will be hot!). Let the eggs cook to how you like them.
Once done, scoop one egg at a time plus the mix underneath into a bowl, sprinkle with a touch more pepper and the parsley garnish and serve. You can add some nice bread or toast on the side, or keep it Keto and Low Carb / No Carb friendly! Eat and enjoy or أكل واستمتع 🇹🇳
