“This is a decadent, sweet treat.  With a little imaginative decorating using shaved or grated dark chocolate, it also makes a beautiful dinner party dessert to dazzle your guests. To ensure your mousse does not become gritty, allow the melted chocolate for the chocolate layer and the melted cocoa butter buttons for the white chocolate layer to cool before folding through the whipped cream. Remember that the mousse sets quickly so it needs to be spooned or piped into your chosen dessert bowls immediately after being made”.

Double Chocolate Mousse Recipe

For the chocolate layer

  • 100g (3 ½ oz) dark chocolate (85 percent cocoa), broken into pieces
  • 220ml (7 ½ fl oz) double cream
  • 1 ½ tablespoons powdered erythritol, sifted

For the white chocolate layer

  • 10g (¼ oz) cocoa butter buttons
  • 180ml (6 ¼ fl oz) double cream
  • 2 tablespoons powdered erythritol
  • 4 tablespoons Edible Health collagen of your choice (we selected Digestive Enzyme Collagen)
  • 3-4 drops liquid stevia (optional)

For the chocolate layer, start by melting 90g (3 ¼ oz) of the dark chocolate in a pan over a very low heat. Set aside to cool.

Whip the double cream in a medium-sized bowl to soft peaks using a hand mixer. Add the erythritol and continue to whip to stiff peaks. Fold through the cooled, melted chocolate and immediately divide between 4 suitably sized dessert bowls or glasses. 

For the white chocolate layer, melt the cocoa butter buttons in a small pan over a very low heat. Set aside and allow to cool.

Whip the double cream in a medium-sized bowl to soft peaks. Add the erythritol and liquid stevia (if using) as well as the Edible Health collagen, cooled, melted cocoa butter and whip well. It will stiffen quickly, so spoon or pipe immediately over the chocolate layer. 

Grate or shave the remaining dark chocolate over the desserts to decorate and store in the refrigerator until needed. 

*If you decide to make these desserts ahead of time, remove them from the refrigerator at least 30 minutes before tucking in.
